Eevee has 7 different evolutions: Flareon, Jolteon, Vaporeon, Espeon, Umbreon, Glaceon and Leafeon so the better question would be which one do you want to evolve it into?

This is a very subjective question, but the most commonly accepted as the best Eevee forms would be Jolteon and Vaporeon, as ranked by Smogon.

Aside from that, most of the forms have numerous benefits and you should look into The Evolution of Eevee, it's a good guide written to help people choose the form they're looking for in terms of need.

Route 217, anywhere there will get Eevee to evolve into its Ice Form, Glaceon.
Finally, a new generation of Pokemon for us to enjoy. There is much to look forward to in 2011!
