if u take away a the stone from a pokemon can it still evolve in pokemon platinum

In most cases, the stone needs to be used on the Pokemon for it to evolve (Ex. Eevee to Flareon), just like a Potion. There are only a few cases where a held item triggers the evolution. These Pokemon are: (from Pokemon Evolution 200)

Gligar (Razor Fang) --> Gliscor (Between 8pm and 4am, level it)
Sneasel (Razor Claw) --> Weavile (Between 8pm and 4am, level it)
Happiny (Oval Stone) --> Chansey (Between 4am and 8pm, level it)
