how do you get the pokemons you want with the natures you want?

More often than not this comes down to persistence.

For the one-time encounter Pokemon, save before you fight them, capture them but make sure you have an open slot in your party so you can immediately see their nature. If it is the wrong one, reset and do it again.

For all others, either keep catching them or breed them until you get what you are after. If you are breeding them and have one with the right nature, be sure to give that one an Everstone to increase the chances of it passing on its nature to its offspring.
