To obtain the different Pickup items, you will need a Pokemon with the ability. As they level up, more items will become available to you.

To get the item, you need to take it from the Pokemon. By going into the Pokemon menu and selecting the Pokemon holding an item, you get the option to take it from them. It is very simple to do after a minute.
