You only have to show the other player a card when you're searching for a card of a specific type. If the spell simply says "search your library for a card" then you don't need to show them anything.

You mean with something like Conjurer's Closet? There is no limit. However, if your creature is exiled with something like Path to Exile you cannot usually get it back.
