can you stifle fading ability of Skyshroud Behemoth when its down to zero to make it live?

You can, but it won't be as effective as you hope. It'll live for one more turn, but at the beginning of your next upkeep, fading will trigger again. You won't be able to remove a counter, so unless you have another Stifle handy, it'll die then.

would it be the same case for vanishing i.e. Lavacore Elemental?

No, that's different. Fading's sacrifice trigger triggers at the beginning of your upkeep when you're unable to remove a counter. Vanishing's triggers when you remove the last counter. You can only remove the last counter once, so it'll only trigger once. Stifle that, and you're fine (unless something puts more counters on it).
