Can you name Pyre Zombie as the card for Pithing Needle?

Sure. You can name any card that exists.

It'll stop the damage ability, but not the return ability.

Why wouldnt it affect the return ability? It refers to a "card"/"source" rather then a "permanent", so wouldnt it still affect activated abilities of cards in the graveyard?

Ys, it does. However, the return ability isn't an activated ability - it's a triggered ability. You can tell by the lack of a colon and the use of the word "Whenever". And Pithing Needle doesn't stop triggered abilities.
