If I gain control of other player's turn with Sorin Markov while a Lethal Vapors is out, can I pay and activate the ability an infinite number of times so that other player doesnt get any more turns this game (which will most likey mean me winning)?

Whoever activated the ability is the one who skips their turn.

I thought so but doesn't the word "you" usually refer to the controller of the spell?

It does. And in this case, the person who activated the ability is the controller of the ability, therefore "you" refers to them.
