if I do a mind bend on a plains and change "plains" to "mountains", is the new card a white producing land called "mountain" or does it also produce red mana?

It's still called "Plains", but its subtype is "Mountain". It can tap for red mana, but not white.

what does it mean "This effect lasts indefinitely" does it persist through different games

No, it just means it doesn't end at the end of the turn. If the card leaves play, or at the end of the game, it changes back.

yea if it persisted through games you would have to remember which cards were mind bended like if you made a trade you'd have to know if the card was mind bend ever
