I play my Emrakul deck using Polymorph and the many Eldrazi Spawn token generating spells.

My QUESTION:

Since Emrakul has protection from colored spells, can Summoning Trap or Polymorph be used to play him? And if so, does his casting ability trigger this way?

Yes, they can, for two reasons. First of all, protection only stops damaging, enchanting, blocking, or targeting, none of which Summoning Trap or Polymorph do. Secondly, like all other abilities that don't say otherwise, Emrakul's protection only works while it's in play.

No, this won't trigger its extra turn ability, sicne you're not actually casting it.
