Yes, you can do that. The first will resolve and counter the spell, then the second will try to resolve, see that its target is no longer legal, and be countered. The exception is if your opponent can do something to prevent the spell being counters (say, if there are two Mana Leaks targeting the spell). Of course, then he can just not pay for the first, and you wasted a card. The better option would be to play one Mana Leak, let it resolve, see if he pays, and if he does pay, play the second Mana Leak.
