A lot of people would think that it's only the creatures that are out at that point in time, but that's wrong. It's easy to see where that assumption comes from - effects that say "Creatures you control get +3/+3 until end of turn", or "Creatures you control gain flying untail end of turn" only effect creatures out at that time. So why is Dauntless Escort different?
The difference is that Dauntless Escort doesn't change the creatures in any way, but rather the rules of the game. It creatures an effect that says "Yo, your guys are indestructible. But just for the turn, dig?". Under that rule, it doesn't matter when creatures come or go - as long as they're under your control, they're indestructible.
