What's confusing you about its ability? When Arbiter of Knollridge enters the battlefield, its triggered ability is put on the stack. When that ability resolves, every player's life total becomes the same as the highest life total among all players.
So, for example: let's say that you have 5 life, while your opponent has 20. If you cast Arbiter of Knollridge, and its ability resolves successfully, your life total becomes 20, since that is the highest life total among all players. Your opponent's life total remains the same, since his life total is already the highest.
Does that make sense? In a multiplayer game, it's just as easy to deal with. In another example:
Player A has 3 life
Player B has 14 life
Player C has 22 life
Player D has 100 life
Now, if Arbiter of Knollridge enters the battlefield under any player's control, all players will have their life total become 100. Again, obviously Player D already has the highest life total, so their life remains the same.
