Does the Gurzigost still die at the end of combat?

Yes it dies. It's second ability lets you change where your damage is assigned it doesn't actually make the creature unblocked. The blocking creature will still damage you and at the end of combat heat stroke will still see it as a blocked creature.

If the blocker has more power than the attackeing creature toughness, would the attacker still do the damage to the player or would it die before damage was assigned?

Assuming there is no first/double strike to deal with, all combat damage is dealt simultaneously. Gurzigost will deal damage to the defending player at the same time damage is dealt to it by the blocking creature(s).
