    Default pair creatures from soulbond unpair at will?

    like if i have Spectral Gateguards and Silverblade Paladin and they are paired and now a Nearheath Pilgrim enters the battlefield and I want to pair it with spectral gateguards, can i UNPAIR gateguards from paladin and pair gateguards to pilgrim instead?

    No. Once two creatures are paired, the only way to unpair them is to have one of them leave your control (or stop being a creature).

    Incidentally, the reminder text for Soulbond sorta answers this:

    They remain paired for as long as you control both of them.)
    Though, reminder text doesn't constitute the actual rules (it's just a shortened form; a reminder of how the rules work, if you will). Here's the full portion from the Comprehensive Rules that answer it definitively for you:

    702.93e A paired creature becomes unpaired if any of the following occur: another player gains
    control of it or the creature itís paired with; it or the creature itís paired with stops being a
    creature; or it or the creature itís paired with leaves the battlefield.

    ...What? That question doesn't make sense.

    Planeswalkers are not players. And even if they were, answer this: can you give control of your creatures away to other players, in general? The answer is that you can't, unless a card effect says you can.

    Again, to drive the point home: planeswalkers are not players, in any sense of the word. If anyone ever implied or outright told you otherwise, they were wrong. Or, more likely, they were trying to simplify how planeswalkers work. Which is clearly the wrong way to go, since it led to your misunderstanding about planeswalkers. Here's the definition of what a player is, from the Comprehensive Rules:

    102.1. A player is one of the people in the game. The active player is the player whose turn it is. The
    other players are nonactive players.
    If planeswalkers were even remotely treated as players, something to that effect would be stated in the above definition. You'll note that this is not the case.
