    If both me and opponent control a Consecrated Sphinx, what would happen when I draw?

    Then your opponent may draw 2.

    Then you may draw 2 or 4.

    Then your opponent may draw 2, 4, 6, or 8.

    This continues until someone decides not to draw.

    but the comprehensive rules say:

    614.5. A replacement effect doesn’t invoke itself repeatedly and gets only one opportunity for each
    event.

    Example: A player controls two permanents, each with an ability that reads “If a creature
    you control would deal damage to a creature or player, it deals double that damage to that
    creature or player instead.” A creature that normally deals 2 damage will deal 8 damage—
    not just 4, and not an infinite amount.

    So wouldnt each consecrated sphinx trigger only once?

    No, because it's not a replacement effect, it's a triggered ability (as you just said).

    are you allowed to count how many cards you have left in your library before deciding if to draw or not

    Yes. Any player can count the remaining cards in any player's library at any time (provided they don't look at/rearrange the cards, of course).

    My ruling is:

    If each player controls a Consecrated Sphinx, their abilities will cause each other to trigger until one player chooses not to draw cards.
