Like for example other player declares he attacks me with Archdemon of Unx (creature with flying)

I declare i block with Magma Phoenix (also creature with flying)

other player plays Adarkar Windform on my magma phoenix ("Target creature loses flying until end of turn")

Now my magma phoenix is no longer a flyer so it cant block the Archdemon of Unx

but on the other hand I already declared it as a blocker for it

    what happens

if you declared it as a blocker it will block even if ti looses flying. if it looses flying prior to beng declared a blocker it wont be able to be declared as a blocker of an attacking creature with flying.

To expand on that a bit, remember that flying and other such abilities only affect how you can declare creatures as blockers. Once blockers have already been declared, tampering with such abilities won't affect them.

Thanks is it the same if for example I declare I block with a Battlefield Percher ("Battlefield Percher can block only creatures with flying.") and then other player casts Adarkar Windform on his attacking creature?

Yup, exactly the same thing - once blockers are declared, it doesn't matter whether they gain or lose flying (or shadow, or unblockability, or any other evasion ability).
