Im not 100% sure on this, but I would assume that's ok unless the enchantment or the creature states it's can't be the target of spells.

Note however that it won't remove the enchantment.

It won't. Enchantments only target when you play them. If they're already in play (or if they come into play without being played), they don't target, so shroud won't affect them.

but if u give protection from red for example to a target that has red enchantment on it the enchantment will fall off
Yep. That's because protection from X specifically states that it can't be enchanted by X.
