They get you the type of land that can produce the color of mana you want/need, they thin your deck, and they trigger landfall.

Fetchlands give you the opportunity to thin your deck, get a land type you need, trigger multiple landfall triggers as well shuffle your deck.

I think the biggest thing is that they really help you to not get mana screwed when playing multi-colored decks.
