Depends. You can't play them on a creature with shroud, since Auras target when you play them. However, if they come into play in some other way, without you playing them, then they don't target, and can therefore go on something with shroud.

Nope. "Protection from enchantments" is really just shorthand for "Protection from enchantments, enchantment spells, and enchantment cards". The activated ability on Plumes comes from an enchantment card, and since First-Wing has protection from it, it can't be targeted by it.

Azorius First-Wing is in my graveyard. I cast Animate Dead and enchant said Azorius First-Wing. What happens?
The Griffin rises from the grave and rejoices at the joy of life and being given a second chance, before promptly screwing it up and dying of a heart attack.
A First-Wing in the graveyard is a legal target for Animate Dead, since the First-Wing's protection ability doesn't function in the graveyard. Animate Dead attaches itself to the First-Wing, and returns it to play. The Aura then loses its "enchant creature card in a graveyard" ability and gains "Enchant creature", and tries to attach itself to the now-alive Griffin. But now that the Griffin is alive, its protection ability is working again, making it illegal for Animate Dead to be attached to it. Animate Dead, being an Aura in play attached to nothing, then storms off in a fit of rejection straight into the graveyard. This causes its other ability to trigger, causing the Griffin to be sacrificed.
