can someone explain to me how cryptborn horror works

What exactly about it confuses you? I'm not sure how to explain it any better than what it written on the card.

As Arix says it works exactly how it does on the card. When it enters the battlefield you count how much life your opponent(s) lost that turn, and he has that many +1/+1 counters on him.

if he loses one life and then gains one life how much counters does it have

He still lost one life, so the horror gets 1 counter.

yeah but it says "TOTAL" life lost so since in the total he didnt lose any life doesnt it not get any counters?

If you bothered to read the gatherer page you'd know this:

10/1/2012: Cryptborn Horror cares about the total life lost, not necessarily what an opponent’s life total is compared to what it was at the beginning of the turn. For example, if an opponent loses 5 life and then gains 10 life on the turn Cryptborn Horror enters the battlefield, it will enter with five +1/+1 counters on it.
