Tajuru Preserver and Sigarda, Host of Herons prevent you from sacrificing to annihilator.

Other than that, there's destroying the creature before it attacks.

You can take the direct approach with Tajuru Preserver. You can use guys that are resistant to death (such as with persist or undying). You could spam tokens. You could kill the creature with annihilator, or otherwise stop it from attacking. You could win before they come out. You could use something like Sacred Ground. There's lots of things you can do.

Many people make the mistake of assuming that the Eldrazi are overpowered, especially new players. Another couple cards you can use are Second Sunrise and Faith's Reward. You sacrifice your lands or creatures, then cast that and get them all back brand new.
