I believe that if you block a creature with double strike using two creatures, then yes you are able to kill them both. If the defending player chooses to only block with one creature, and that creature dies on the first strike, then the second strike is dealt directly to the player. Maybe an example would be better..
if you are attacking using a 2/2 creature with double strike and your opponent has the option of defending with two 2/2 creatures. Your opponent has two options.
Defend using only one 2/2 creature - your attacking creature deals 2 damage on the first strike killing it, and then dealing 2 damage directly to your opponent
Defend using both 2/2 creatures - your attacking creature deals 2 damage to one defender during the first resolve stage, killing it, and an additional 2 damage to the second defender during the second resolve stage, also killing it. However in the second resolve stage, the defender without first-strike/double-strike are able to retaliate, dealing 2 damage to your attacker and killing it ( long story short: everyone dies =P ).
So.. yes, if your opponent CHOOSES to block with two creatures and your attacker with double strike deals sufficient damage, then you are able to kill one blocker on first strike and one on normal strike.
